Meal Plan 4/10-4/16 And Fitness

Good morning friends! This post is going to be short and sweet because I have a lot to do this morning before we head to church! So let’s get right to it; this week’s meals! (FYI, I started doing my meal planning a little different a little bit ago. I go grocery shopping on either Thursday or Friday so I plan my meals from a Thursday to the next Wednesday.)

Meal plan:

Thursday: Avocado chicken parmesan with sweet potatoes and bell peppers for ryan, broccoli for me

Friday: Chili’s date night (we had a gift card, yay for free food!)

Saturday: Spaghetti (from spaghetti squash) with bean balls. (So good!)

Sunday: Honey teriyaki salmon, sweet potatoes, veggies

Monday: Chiliย (I know it’s warm and spring, but we love chili year around!)

Tuesday: Avocado chicken salad wraps (I need to post this recipe soon!)

Wednesday: Mexican quinoa with black beans, tortillas, cheese sauce, and guacamole

There you have it! I also plan on doing a post later this week on how I meal plan and budget for groceries. We buy a lot of food in our house, so I have to be smart about what I buy and when I buy it.

Onto some fitness for this week:

Who am I kidding? I don’t have much to share this week on that front!

Since my marathon last Sunday I’ve been making sure I give my body plenty of time to recover. This week I just focused on resting my body, stretching, and foam rolling. Friday night Ryan and I went to the gym and I did 10 minutes on the elliptical, followed by a light arm and ab strength workout. I did a few squats, but that was the only exercise that I did on my legs. Saturday morning I did some yoga and Ryan and I went for a ย walk, but that’s as far as my workouts went this week.

My hamstring is still giving me some trouble, so unfortunately this will be another week with no running for me. But that’s okay, I know my body needs this rest and recovery time. If I want to do another marathon, then I have to take care of my body!

I hope everyone enjoys the rest of their weekend and gets ready for the next week to begin tomorrow!

    1. The avocado chicken parm is so good! Plus, I use almond flour instead of regular flour and quinoa as breadcrumbs, which makes the meal gluten free!

    1. No I haven’t. What is OSG actually? This is probably a stupid question, but I have never heard of it.

        1. Oh I should have known you meant that! Yes I love OSG too! She has become my favorite recipe blog, and I look there for so many recipe ideas! I really want to get her cookbook! I have heard marvelous things about it!
